I like eating food from different cuisines and Spanish cuisine is one of them. I don’t mind that it originated from a country that colonized us for years. That was a thing of the past, right? Besides, their food is delicious. Today, my boyfriend brought me paella that he cooked, so it’s safe to say this isn’t my recipe. But he agreed to post this recipe in my blog for keepsake. 😍
- 4 pcs chicken thighs
- 1 cup chorizo bilbao, sliced
- 1 cup small onion, diced
- 5 cloves garlic, minced
- 1 cup Japanese rice
- 1 tsp tomato paste
- 6 cups chicken stock
- 1 tbsp saffron
- 20 pcs fresh clams
- 12 pcs shrimps
- 12 pcs mussels, cleaned
- 1 cup green peas, bell peppers, chopped parsley, Spanish paprika
- 2 pcs lemon
- Season chicken with salt, pepper and paprika. Sear seasoned chicken in a hot paella pan. Remove from heat and set aside.
- In the same pan, saute chorizo, onions and garlic. Add rice and continue sauteing until the rice becomes opaque in color and fully coated with olive oil.
- Add tomato paste and continue sauteing for a minute.
- Stir saffron into the chicken stock. Pour in stock to the cracked rice gradually until the rice is almost cooked.
- Add the shrimps, clams, mussels and cover with aluminum foil for 5 minutes or until the shells open.
- Garnish with green peas, bell peppers and lemon wedges.
- Serve and eat!
This recipe has a lot of ingredients, but the procedure isn’t that complicated. 👌 Btw, did you know that coating of the rice with oil is called cracking? Yup, I learned that just today while eating this paella. It was delicious! I am so grateful for my boyfriend who knows how to cook and feed me. 🤣❤️
